Chuck Wagon Casserole Recipe

  • 1/2 cup chopped onion
  • 1/2 cup green bell pepper, chopped
  • 1 pound Ground Beef
  • 1 can mild chili beans inch sauce (15 1/2 ounce can)
  • 3/4 cup barbecue sauce
  • 1/2 teaspoon Salt
  • 1 package corn muffin mix (8 1/2 ounce pkg)
  • 1 can mexi-corn, drained (11 ounce can)
Preheat oven to 400°. Brown ground beef with onion and bell pepper, drain grease. Stir in chili beans, barbecue sauce and salt. Bring to a boil and spoon into 9x9 baker. Prepare corn muffin mix following package directions, stir in mexi-corn to batter. Spoon over meat mixture. Bake 30 minutes or until golden brown. Yields 6 servings.
