Grilled Chicken Kabobs Recipe

These skewers are worth the work of making each one. Have the kids create their own masterpiece to lighten the load. The vegetables add great flavor to the meat and you get your vegetables and protein together on one stick.

  • 1/4 cup vegetable oil
  • 2 tablespoons cider vinegar
  • 2 teaspoons Old Bay seasoning
  • 1 teaspoon dried parsley flakes
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 pounds chicken breast, boneless, skinless
  • 1 each green pepper, cut into chunks
  • 1 red pepper, cut into chunks
  • 2 onions, cut into chunks
  • 1 package mushrooms, cleaned

Mix seasonings. Cube chicken. Place chicken and seasonings in refrigerator for 20 minutes to 6 hours.

On skewers, alternate chicken and vegetables. Place on grill and cook until done.

Serve with rice.

"The mushrooms and chicken are always my favorites. I like to add yellow squash and zucchini, too. This marinade really keeps the chicken moist. I had issues with my grill, so I finished them off in the oven on broil, and they were still delicious."
