Chicken Casserole 42 Recipe

  • 1 package herbed stuffing mix (12 ounce pkg)
  • 4 tablespoons margarine
  • 2 1/2 cups chicken broth
  • 4 cups diced cooked chicken
  • 1/2 cup onion chopped
  • 1/4 cup Mayonnaise
  • 3/4 teaspoon salt
  • 2 Eggs
  • 1 1/2 cups milk
  • 1 can cream of mushroom soup (small can)
  • 1/2 cup grated Parmesan cheese
Combine stuffing mix, melted margarine and chicken broth, toss until mixed. Place 1/2 of mixture in greased 13" x 9" pan. In a bowl, mix chicken, onion, mayonnaise, and salt. Sprinkle over stuffing mix. Spread remaining mixture over chicken. Beat eggs and milk and pour over. Refrigerate several hours. One hour before serving spread mushroom soup over mixture. Bake at 325° for 40 minutes. Sprinkle with cheese. Return to oven until cheese is melted.
