Chocolate Chip Cookies 242 Recipe

Ingredients
  • 1 1/2 cups brown rice flour
  • 1/4 cup sugar, granulated
  • 2/3 cup sugar, brown, packed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 teaspoon xanthan gum
  • 1/8 cup water
  • 1/4 cup oil, canola
  • 1/8 cup applesauce, unsweetened
  • 1 1/2 teaspoons Vanilla
  • 1 1/2 teaspoons vinegar, cider
  • 1 cup chocolate chips
Directions
Yields 2 dozen cookies.

In a large bowl, whisk together flour, sugars, baking powder, baking powder, baking soda, salt, and xanthan gum. Add water, oil, applesauce, vanilla, and vinegar. Stir well using a wooden spoon or a fork. Add chocolate chips and mix again. You can bake this cookie immediately or you can place the dough into the refrigerator and use as desired. When ready to bake, preheat your oven to 375°. Lightly grease your cookie sheet or you can line your sheet with parchment paper. Make tablespoonful size balls using a scooper or a spoon. Press balls down about 1/4" thick. Bake for 13 minutes. Remove from oven. Using a metal spatula immediately remove from cookie sheet and transfer to a cooling rack.
