Caesar Sausage Crostini Recipe

  • 1 baguette - very thinly sliced
  • 1 pound fresh sweet premio Italian sausage - casings removed
  • 1/2 cup onion - finely chopped
  • 2 garlic cloves - minced
  • 1/2 cup mayonnaise
  • 1/4 cup creamy Caesar salad dressing
  • 8 ounces Italian blend cheese - shredded
  • 1 teaspoon dried oregano
  • 1/8 teaspoon dried red pepper - crushed (optional)
  • salt and pepper - to taste
  • Preheat oven to 375 degrees F.
  • Place baguette slices in single layer on large baking sheet.
  • Bake for 5-8 minutes or until lightly toasted.
  • Remove from oven and set aside.
  • Preheat broiler.
  • In a large non-stick skillet cook sausage, onion, and garlic until sausage is brown and broken up and onion is cooked through and tender.
  • Drain off excess fat then set aside to cool.
  • Meanwhile in large mixing bowl combine mayonnaise, Caesar salad dressing, cheese, oregano, red pepper (if desired), and salt and pepper to taste; mix until well combined.
  • Mix in cooled sausage mixture and mix until well combined.
  • Spread over toasted baguette slices and return to baking sheet.
  • Place about 6 inches below broiler for about 2-4 minutes or until bubbly. Serve immediately.
