Hearty Chicken Noodle Soup - Serves 100 Recipe

  • 10 tablespoons butter
  • 10 onions, chopped (large)
  • 30 cups cooked chicken, chopped
  • 30 cans chicken broth (14 ounce cans)
  • 10 cans cream of mushroom soup (10 3/4 ounce cans)
  • 10 cans cream of chicken soup (10 3/4 ounce cans)
  • 5 packages spaghetti inch 2 inch pieces (16 ounce pkgs)
  • 70 stalks celery, finely chopped
  • 60 carrots, finely chopped
  • 3 tablespoons poultry seasoning
  • 3 tablespoons pepper
  • 3 tablespoons grated lemon rind
  • 5 quarts milk
  • 8 packages cream cheese (8 ounce pkgs)
  • 10 cups grated cheese for garnish
Melt butter over medium heat; add onion, saut until tender. Stir in chicken and next 9 ingredients; bring to a boil. Reduce heat, and simmer 45 minutes. Stir in milk and cream cheese; return to a simmer. Remove from the heat and let stand 10 minutes. Sprinkle each serving with cheese. This makes a nice meal with bread and a green salad. Serves 100.
