Grandma's Easy Chicken Noodle Soup Recipe

Soup that tastes like you worked on it all day but actually ready in less than an hour. Serve this soup with soda crackers and peanut butter sandwiches. The frozen egg noodles are as close to homemade as you'll find and work perfectly in this soup.

Ingredients
  • 3 boneless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter
  • 1 onion, diced
  • 3 stalks celery, sliced
  • 1 1/2 cups carrots, sliced
  • 64 ounces chicken broth
  • 1 package frozen egg noodles
  • 1 teaspoon thyme
  • 2 teaspoons parsley
  • 1 bay leaf

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper for easy clean-up.

Place chicken on prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Cook until no longer pink, 15-20 minutes; dice chicken up.

In a stock pot, melt butter. Saute onion, celery and carrots until softened, approximately 5 minutes.

Add broth, noodles, seasonings and diced chicken to mixture. Bring to a boil.

Reduce heat to a simmer and cover. Simmer for 20-30 minutes until noodles are cooked.

Remove bay leaf before serving.
