Confetti Salad Recipe

Ingredients
  • 2 cups red cabbage, shredded
  • 1 can white pinto beans (cannellini), 19 oz. - drained and rinsed
  • 1/3 cup walnuts, toasted
  • 2 large scallions, sliced, with green tops
  • Salt and pepper to taste
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons orange juice

  • Put first five (5) ingredients in a bowl.
  • Whisk together oil, vinegar, and juice.
  • Pour dressing over other ingredients.
  • Toss together until evenly distributed and serve.
