Pinwheel Date Nut Cookies Recipe

Ingredients
  • 1 pound dates, cut up
  • 1/2 cup sugar
  • 2 cups water
  • 1 cup nuts, chopped
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 1 cup shortening
  • 3 Eggs
  • 4 cups flour
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon Salt
Directions
Cook and cool dates, sugar and water. Add nuts. Mix remaining ingredients together. Roll in waxed paper 1/4-inch thick. Spread filling on dough. Roll up. Chill overnight. Slice and bake at 350° until lightly browned.
