Zucchini Hamburger Casserole Recipe

  • 4 cups sliced zucchini
  • 1 teaspoon Salt
  • 1 pound hamburger
  • 1/2 cup chopped onion
  • 1 clove garlic (medium clove)
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 2 cups cooked rice
  • 8 ounces tomato sauce
  • 1 cup cottage cheese
  • 3/4 cup Cheddar cheese
  • 1 egg
Toss zucchini with salt. Place half of zucchini in greased, 3-quart casserole. In medium skillet, sauté beef, onion, garlic, oregano and pepper until meat is browned. Stir in rice and tomato sauce. Spread meat mixture over zucchini. Mix cottage cheese, 1/2 cup cheddar cheese and egg. Spoon that over meat mixture. Layer with remaining zucchini and sprinkle with remaining cheddar cheese. Bake 350° for 25-30 minutes or until bubbly. Serves 6.
