| | Directions | | Toss zucchini with salt. Place half of zucchini in greased, 3-quart casserole. In medium skillet, sauté beef, onion, garlic, oregano and pepper until meat is browned. Stir in rice and tomato sauce. Spread meat mixture over zucchini. Mix cottage cheese, 1/2 cup cheddar cheese and egg. Spoon that over meat mixture. Layer with remaining zucchini and sprinkle with remaining cheddar cheese. Bake 350° for 25-30 minutes or until bubbly. Serves 6. |
