Blueberry & Peach Baked Oatmeal Recipe

Ingredients
  • 3 cups rolled oats
  • 1/2 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon Salt
  • 2 egg whites
  • 1 egg (large)
  • 1 1/4 cups fat-free milk
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • 1 can peaches, drained and chopped (15 ounce can)
  • 1 cup blueberries (fresh or frozen)
  • 1/3 cup walnuts, chopped
Directions
1.Preheat oven to 350

2.In a large bowl, combine oats, brown sugar, baking soda and salt

3.Whisk the egg whites, egg, milk, oil and vanilla

4.Add to dry ingredients and stir until blended

5.Let stand for 5 minutes

6.Stir in peaches and blueberries

7.Transfer to 13 x 9 baking dish coated with cooking spray

8.Sprinkle with walnuts

9.Bake uncovered for 35 - 40 minutes or until top is lightly browned and thermometer reads 160. Serve with warm milk
