Applesauce Muffins 8 Recipe

  • 3 cups all purpose flour
  • 1/3 cup sugar
  • 4 teaspoons double acting baking powder
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon Salt
  • 1 1/2 cups Applesauce
  • 6 tablespoons butter or margarine, melted
  • 1/2 cup Milk
  • 1 egg
  • 3/4 cup walnuts or pecans,chopped
Grease 12 3-inch muffin pan cups, set aside. Preheat oven to 400°. In large bowl, mix first 6 ingredients with a fork. In medium bowl with fork, beat applesauce, melted butter, milk, and egg until blended, stir into flour mixture just until flour is moistened. Batter will be lumpy. With spoon, stir in nuts. Spoon into muffin pans. Bake 20 to 25 minutes until toothpick inserted in center comes out clean. Remove from pans immediately. Serve warm. To serve later, cool muffins on wire rack, wrap in foil. Reheat wrapped muffins in 400° oven 10 minutes or until warm.
