Strawberry Quick Bread Recipe

  • 3 cups all purpose flour
  • 2 cups + 2 T. sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon baking soda
  • 1 - 16 ounce pkg frozen unsweetened strawberries, thawed and mashed
  • 1 1/4 cups vegetable oil
  • 4 eggs
  • 1 1/4 cups chopped pecans
Preheat oven to 350°. Coat two 9X5" loaf pans with nonstick cooking spray. In large bowl, combine flour, 2 cups sugar, cinnamon, salt, and baking soda. Mix well. In a medium bowl, combine the strawberries and remaining 2 T. sugar. Mix well. Add the oil and eggs and blend until well combined. Add to the flour mixture and stir in the chopped pecans, blending until moistened. Divide the batter equally into the loaf pans. Bake for 55-60 minutes or until a wooden toothpick inserted in the center comes out clean. Let cool on a rack for 10 minutes, then remove from the pan to cool completely.
