Tater tot hotdish made with chicken. This tater tot hotdish is flavored with ranch dressing mix and includes peas and corn for a complete meal. It is topped with cheese and bacon for an extra special touch of flavor.

Ingredients
  • 8 slices bacon
  • 1 cup sour cream
  • 1/2 cup ranch salad dressing (bottled dressing)
  • 1/4 cup milk
  • 2 cups diced cooked chicken
  • 1 can chicken with rice soup (26 oz.)
  • 1 1/2 cups frozen corn
  • 1 cup frozen peas
  • 1 package tater tots (2 lb. pkg.)
  • 2 cups shredded Monterey Jack cheese

  • Cook the bacon and then cut into small pieces; set aside.
  • Preheat the oven to 350° F. Grease the bottom and sides of the baking dish.
  • Combine the sour cream, ranch dressing, and milk together in a large bowl. Stir until blended.
  • Add the chicken, chicken with rice soup, corn, and peas; stir to mix into the creamed mixture.
  • Pour this mixture into the prepared baking dish. Distribute the tater tots on top evenly.
  • Sprinkle the cheese over the tater tots and the bacon on top of the cheese.
  • Place in the preheated oven and bake for 1 hour.
Note: The mixture may seem a little soupy before adding the tater tots but it will not be that way once it is baked. Also, using rotisserie chicken from the deli at the super market makes the preparation of this recipe a lot easier.
