Spirited Cranberry Sauce Recipe

Ingredients
1/2 cup thinly sliced dried apricots (3 ounce)
1/4 cup cooking sherry
1/4 cup orange juice
3/4 cup water
2/3 cup sugar
1/4 cup honey
1 package fresh or frozen cranberries (12 ounce pkg)
1/2 cup finely chopped walnuts
2 tablespoons chopped crystallized ginger
Directions
Combine apricots and sherry in a small bowl, cover and let stand a couple of hours. Combine water, orange juice and sugar in a medium saucepan, bring to a boil. Add apricot mixture, honey, cranberries and ginger. Cook over medium heat for about 10 minutes, stirring often, until slightly thick. Stir in walnuts. Spoon into a bowl, cover and chill. Reheat at serving time if desired, or serve cold or at room temp.
