Spinach Salad with Orange Juice Dressing Recipe

Ingredients
  • For Salad
  • 1 can Mandarin Oranges (Small Can)
  • 1/2 pound bacon, cooked and crumbled into small pieces
  • 1/2 purple onion, thinly sliced (optional) (medium)
  • 1 package spinach or spring mix
  • For Dressing
  • 3 tablespoons sugar
  • 1 1/2 teaspoons finely shredded orange peel
  • 2 tablespoons orange juice
  • 2 tablespoons vinegar
  • 1 tablespoon finely chopped onion
  • dash of black pepper
  • 1/3 cup vegetable oil
Directions
To make dressing, use a food processor and combine first six ingredients. Add oil slowly, and run processor until well blended. (Dressing can be made ahead.) Combine salad ingredients and top with dressing. Makes 4 to 6 servings.
