Oven Roasted Squash Medley with Onions, Tomatoes, and Parmesan Cheese Recipe

Ingredients
  • 2 yellow summer squash (diced medium)
  • 2 zucchini squash (diced medium)
  • 1 red onion
  • 1/2 tablespoon dry basil
  • 1/2 cup cherry or grape tomatoes
  • 2 tablespoons Spice Delight all Purpose Essence
  • 1/4 cup olive oil
  • 1/4 cup Parmesan cheese
Directions
Preheat oven to 350°. Medium dice squash and onions, then place in a bowl. Drizzle oil and Spice Delight and basil on to the vegetables. Mix well. Spread vegetables onto a cookie sheet pan and place pan into preheated oven. Roast for 20 minutes. Once squash has finished roasting, place the squash in a serving bowl and fold in the Parmesan cheese. Garnish with tomatoes of choice.
