Whole Wheat Bread 22 Recipe

  • 3 cups hot water
  • 2 tablespoons yeast
  • 1/4 cup honey
  • 1 tablespoon salt
  • 1/4 cup olive oil
  • 1/4 cup wheat gluten
  • 2 tablespoons liquid lecithin
  • 7 - 7 1/2 cup whole wheat flour
Put 3 C. hot water in bread mixer. Add 2 T. yeast. Add honey, oil, salt, gluten and lecithin. On low mixer speed, add 4 C. wheat flour. Turn up speed on mixer. Add 3 or more C. wheat flour. Add flour until the dough pulls away from the sides of the mixer. Turn up speed to high and mix for 5 to 10 minutes.

Take out dough hook and cover bread with a towel. Let rise until double in size. Punch down the dough. Divide in half. Form 2 loaves. Place formed dough into greased bread pans. Preheat oven to 425°. Let bread rise in pans until dough is level with top of pan. Cook for 10 min. at 425°. Turn down oven to 350° and cook for 20 minutes. Remove from oven and brush with butter. Enjoy!
