Sour Cream Potato Soup Recipe

Ingredients
  • 4 cups water
  • 6 potatoes peeled and diced (medium)
  • 1 onion, chopped
  • 2 carrots, diced (large)
  • 2 tablespoons salt
  • 1/4 teaspoon pepper
  • 3 cups milk
  • 1/2 cup sour cream
Directions
Peel potatoes and carrots. Boil in water until tender. Strain and reserve 1 cup water. In saucepan, sauté onions in butter until tender. Add remaining ingredients except some cream. Simmer 30 minutes, add some cream and mix well. Serve hot and sprinkle with paprika. (I keep all of the water in case I need to add to soup.
