Irish Beef Stew 2 Recipe

  • 2 pounds beef, cubed
  • 2 cups Potatoes, diced
  • 1 cup Onions, diced
  • 1/8 teaspoon pepper
  • 1 cup fresh parsley, chopped
  • 4 cups Instant Mashed Potatoes, dry
  • 3 quarts water
  • 1 cup carrots, diced
  • 1/2 teaspoon Salt
  • 2 bay leaves
Boil beef cubes in water with bay leaves, salt and pepper. When beef is soft, drain off liquid. Add potatoes, carrots and onions to liquid and cook until creamy. Thicken liquid and vegetables with instant mashed potatoes to the desired consistency. Add meat and chopped parsley and serve.
