Creamy Potato Soup 4 Recipe

Ingredients
  • 6 potatoes, peeled & diced (large)
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 teaspoon Salt
  • 1/2 teaspoon pepper
  • 1 quart milk
  • 1 stick butter or margarine
  • 4 tablespoons cornstarch
  • 1/2 cup shredded cheddar cheese, if desired
Directions
In a large pan, place potatoes, onion, celery, salt & pepper in enough water to cover. Cook until tender. Do not drain. (Most of the water should be absorbed while cooking). Add milk, butter, and cornstarch. Bring back to a boil, stirring all the while. Boil slowly until thickened. Serve with shredded cheese, if desired
