Eggplant Casserole 8 Recipe

Ingredients
  • 1 tablespoon onion chopped
  • 6 tablespoons butter
  • 1 teaspoon Salt
  • 2 Eggs Beaten
  • 1 cup saltine cracker crumbs
  • 1 cup milk
  • 2 cups cubed and cooked eggplant (drained)
  • 1/4 teaspoon pepper
  • 1/4 teaspoon Sage
  • 1 cup cubed Velveeta cheese
Directions
While eggplant is still hot, add butter

Mix until melted. Add other ingredients and mix well. Pour into buttered 9 x 9 casserole dish. bake at 350° until center rises and cracks open. Serves 6-8.
