Casher Butter Crunch Popcorn Recipe

  • 14 cups freshly popped popcorn
  • 1 stick butter
  • 1/4 cup Light Corn Syrup
  • 1/4 teaspoon baking soda
  • 1 1/2 cups salted roasted cashews
  • 1 cup Brown Sugar
  • 1 teaspoon Salt
Preheat oven to 250°. Lightly butter a large baking sheet; spread popcorn and cashews on sheet. Keep warm in oven.

Mix butter, brown sugar, corn syrup and salt in a small saucepan. Stir until sugar dissolves, then continue cooking undisturbed until reaches 248°F (firm consistency). Remove from heat and stir in baking soda- mixture will roll vigorously- stir until smooth.

Drizzle sugar mixture evenly over popcorn and nuts. Toss well with a spatula.

Bake 45 minutes, tossing every 10 minutes. Cool on baking sheet; store in covered container.
