Slow Cooker Ham Cassoulet Recipe

Ingredients
1 pound dried navy beans or great northern beans, rinsed
4 cups chicken broth
2 cups chopped onions
1 cup wine or water
6 cloves garlic, smashed
6 sprigs fresh thyme or 1 teaspoon of dried
2 bay leaves
1 teaspoon ground pepper
1 can diced tomatoes inch juice (14.5 ounce can)
2 cups sliced carrots
2 cups cubed ham
1/2 cup chopped parsley
Directions
Soak the beans overnight in water. Drain the liquid. Cook the beans in a slow cooker on low with everything except the carrots, ham and parsley for 7 hours. Then add the carrots and ham and cook for another 5 hours. Stir in the parsley right before serving.
Makes approximately 8 main course servings.
