Baked Fish with Spinach and Mushrooms Recipe

Ingredients
  • 1 pound fresh spinach, well washed
  • 1/4 cup minced onion
  • 3/4 cup sliced mushrooms
  • 1 teaspoon oil
  • 2 tablespoons butter
  • 1 1/2 tablespoons unbleached or whole wheat pastry flour
  • 1 cup milk
  • 1/4 cup dry white wine
  • 1 pound fish fillets
  • 1/2 cup grated white cheddar
Directions
Steam spinach just until wilted and drain well. Place in lightly oiled shallow baking dish. Sprinkle with onion, mushrooms, salt and pepper and oil. Melt butter in sauce pan, stir in flour until smooth, then blend in milk and stir until thickened and smooth. Add white wine. Arrange fillets over spinach and vegetables. Pour white sauce over all and sprinkle with cheese. Bake at 350° for 45 minutes or until fish flakes easy with a fork.
