Southwest Chicken Quiche Recipe

  • CRUST:
  • 1 1/2 cups flour
  • 1/4 cup butter
  • 3 tablespoons water
  • 1/4 cup Egg Beaters
  • 3 eggs
  • 3/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 3/4 teaspoon garlic
  • 3/4 cup cheddar
  • 1/2 cup corn
  • 3/4 cup mozzarella
  • 3/4 cup black beans
  • 1/2 cup diced tomatoes
  • 6 ounces chicken breast, cooked,sliced thin
  • 1/4 cup sweet banana pepper rings
For the crust combine ingredients in a mixer with knead attachment and blend until dough forms. Roll out dough and put into greased quiche pan. Begin layering your quiche with a thin layer of chicken (approximately 1/2 of the chicken), 1/2 cup black beans, 1/4 cup corn, 1/4 cup tomatoes, 3/4 cup mozzarella and top with the spices. Layer with the other half of the chicken, 1/4 cup black beans, 1/4 cup corn, 1/4 cup tomatoes and 3/4 cup cheddar cheese. Top with sweet banana pepper rings. Mix eggs and heavy cream together and pour over quiche. Bake 350° for 1 hour or until golden brown.
