Cracker 'N Vegetable Lasagna Recipe

  • 1 red pepper, cut into strips (medium)
  • 1 onion, sliced (small)
  • 1 zucchini, sliced (small)
  • 1/2 teaspoon dried oregano
  • 1 tablespoon butter or margarine
  • 32 crackers, any variety
  • 1 reduced fat cheddar cheese, shredded (4 ounce 1 cup )
  • 2 cups skim milk
  • 1 cup Egg Beaters
Preheat oven to 350°. In large skillet, over medium heat, cook and stir vegetables and oregano in butter until tender. In lightly greased 9X9 baking pan layer half each of crackers, vegetables, then cheese. Repeat layers ending with cheese. In a small bowl beat together milk and Egg Beaters. Evenly pour over cheese layer. Bake 30-35 minutes or until knife inserted in center comes out clean.
