Cheap Jambalaya Recipe

  • 1 pound Ground Beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 clove garlic, finely minced (may use dry or bottled)
  • 1 can cream of tomato soup diluted with 1 can water
  • 2/3 cup uncooked rice
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon Thyme
  • 1 teaspoon Salt
Brown and drain ground beef. Remove the beef from the pan and spray the pan with cooking spray. Return the ground beef and add all the rest of the ingredients stirring to mix. Bring to a boil, stir, then cover and reduce the heat to simmer. Cook 35 min. or until the rice is cooked. Stir well before serving. This works well as a main dish with a salad and French bread or it may be used to stuff green peppers.
