Bacon Wrapped Mushrooms with Barbecue Sauce Recipe

Ingredients
  • 24 small/medium mushrooms, cleaned, stems removed
  • 12 slices of bacon
  • 1 cup honey barbecue sauce
  • SAUCE:
  • 2 cups ketchup
  • 1 cup white wine
  • 1/3 cup honey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon dried parsley flakes
  • 2 tablespoons white vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 dash of hot sauce
  • salt and pepper to taste
Directions
  • Cut bacon slices in half, crosswise. Microwave 1/2 at a time on a paper towel on high for 1 minute. Pat dry and set out on paper towel.
  • Wrap each mushroom with 1/2 piece of bacon, secure with wooden toothpick. (May have to use whole slice of bacon if mushrooms are large.)
  • Dip wrapped mushrooms in barbecue sauce.
  • Grill wrapped mushrooms over medium heat (350 - 400° F) 4 to 5 minutes each side or until bacon is crisp. Watch for flare ups from bacon grease.
  • Serve warm with warm barbecue sauce for dipping.
Barbecue Sauce:
  • Bring all ingredients to a boil in saucepan, reduce heat and simmer. Stirring often, 15-20 minutes or until slightly thickened. Makes about 2 1/2 Cups. (Also good on Ribs and Chicken)

  • 16 ounces garbanzo beans, drained
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice, fresh
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 teaspoon cumin seeds
  • 2 tablespoons tahini or creamy peanut butter
  • 1 tablespoon parsley, chopped (optional)
Directions
  • Purée drained beans, garlic and parsley in a food processor. Add remaining ingredients and process until combined.
  • Serve at room temperature, with raw vegetables or crackers. Store in refrigerator.

  • SALSA
  • 2 mangoes - peeled and diced
  • 1 red pepper - seeded and diced
  • 1/2 cup orange juice
  • 2 limes - juiced
  • 1/4 cup fresh basil - minced or 2 Tblsp. jarred basil
  • 1 jalapeño - seeded and chopped fine
  • salt and pepper - to taste
  • CHICKEN MARINADE
  • 1/2 cup orange juice
  • 2 tablespoons frozen limeade, thawed
  • salt and pepper
  • 6 boneless, skinless, chicken breasts
Directions
  • Salsa - combine all ingredients and season with salt and pepper. Cover and refrigerate for at least 2 hours.
  • Chicken marinade - Combine orange juice, limeade, salt, pepper in plastic bag. Add chicken. Seal bag and turn bag to combine ingredients and cover chicken. Marinate in refrigerator at least 2 hours.
  • Heat grill to medium. Remove chicken from marinade and grill until brown, about 5-7 minutes each side, depending on thickness.
  • Top with mango salsa and serve.

  • 1 cauliflower head, trimmed, cut into pieces
  • 1/4 cup olive oil
  • 1 tablespoon rosemary - fresh, chopped
  • 2 tablespoons ranch dressing
  • 1/4 cup parmesan cheese - shredded
  • 1/4 cup Asiago cheese - shredded
  • 1 clove garlic - minced
  • 1 green onion - chopped
  • salt and pepper to taste
  • 1 tablespoon butter
Directions
  • Preheat oven to 400°.
  • Spread cauliflower pieces on baking sheet. Sprinkle with about 1/4 cup olive oil. Sprinkle with rosemary, salt and pepper.
  • Bake in oven 20 minutes, stirring occasionally, until lightly browned and tender.
  • When done, immediately place in large bowl with sour cream, ranch dressing, cheeses, garlic, salt & pepper, and butter.
  • Using immersion blender, process all until smooth. You may need to add more ranch dressing if it seems dry.
  • Season with salt and pepper if needed. Garnish with green onion. Serve hot.

  • 1 pound fresh asparagus
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • salt and pepper to taste
Directions
  • Soak skewers in water for 30 minutes or more; preheat the grill.
  • Wash the asparagus and snap off the tough ends.
  • Mix the olive oil and soy sauce. Brush or rub the mixture over the asparagus spears.
  • Line up 4, 5, or 6 spears of asparagus and pierce near the base and top with sharp skewers. Leave a little space between the spears to aid cooking.
  • Grill speared asparagus over direct heat 3-4 minutes per side, or until spears are crunchy-tender. Add salt and pepper to taste.

  • 1 1/3 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter - softened
  • 1/3 cup sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 2/3 cup sour cream
  • 2 cups strawberries - hulled and sliced thin
  • 1/4 cup sugar
  • 8 ounces whipped topping
Directions
  1. Preheat oven to 350 degrees F. Line muffin tins with paper liners.
  2. In a medium bowl, combine flour, baking powder, baking soda and salt. In a large bowl, beat butter and sugar until light and creamy. Beat in eggs one at a time and vanilla.
  3. Turn mixer to low, and alternate beating in flour mixture and sour cream until combined. Continue to beat on medium until batter is thick and smooth.
  4. Fill liners 2/3 full. Bake 24 to 26 minutes, or until lightly golden and a pick inserted in the center of a cupcake comes out clean.
  5. Cool in pan 10 minutes then remove from pan and cool completely.
  6. For strawberry sauce, combine strawberries with sugar and let sit until this becomes syrupy, about an hour.
  7. Use a skewer to poke several holes into top of each cupcake. Spoon some syrup from bowl over top, allowing it to absorb into cupcakes. Top with strawberries and whipped topping. Drizzle with remaining strawberry syrup.

Ingredients
  • 2 ounces white rum
  • 1 teaspoon sugar
  • 2 ounces lime juice (or juice of 1 lime)
  • 4 mint leaves, torn or coarsely chopped
  • 2 ounces club soda
  • garnish: sprigs of mint and slices or quarter of lime
  • ice, add as desired
Directions
  • Place sugar, torn or chopped pieces of mint, and lime juice in a tall container.
  • Use a muddler or the handle end of a long wooden spoon to mix the ingredients and crush the fresh mint on the bottom of the container, rubbing it around the glass to release the mint flavors. 
  • Add and mix the rum into the other ingredients that have been crushed and mixed. Strain the mixture into the Collins glass.
  • Add club soda to top off mixture; then add ice.
