Ingredients
2 whole chicken breasts (cooked and shredded)
1 hothouse cucumber, sliced
1 can water chestnuts, sliced
1 cup bean sprouts
1 can coconut, toasted
4 ounces raw cashews
Sauce
1/4 cup hoisin sauce
2 tablespoons sugar
2 tablespoons sesame oil
4 tablespoons rice vinegar
Directions
Combine salad ingredients. Combine sauce ingredients, pour over salad and toss.
