Chicken Roulade Recipe

A healthy entree that wraps a moist and seasoned chicken breast around garlic and asparagus. So simple, yet so elegant to serve. Serve this on a bed of wild rice to complete the meal.

  • 4 chicken breast halves, boneless, skinless
  • 24 salt and pepper, to taste
  • 1 clove garlic, minced
  • 12 stalks asparagus
  • 3 tablespoons butter
  • 1 tablespoon oil

Preheat oven to 425 degrees. Between sheets of plastic wrap, pound each chicken breast to 1/4" thick.

Season with salt and pepper and rub garlic on inside of the chicken breast.

Place asparagus spears in center of each breast. Roll up and secure with a toothpick.

In a large skillet, melt butter with oil. Brown chicken on all sides.

Place skillet in preheated oven and bake uncovered for 15 minutes or until cooked through.

"I loved this dish! It really was easy to prepare. I had my daughter flatten the chicken in a ziploc bag with a rolling pin. One great addition would be a pan sauce from the drippings when the chicken was browned. I will try that next time with a little broth, cornstarch and seasonings."
