Asian Noodle Bowl Recipe

  • 2 cups diced cooked chicken
  • 2 cups thinly sliced bok choy
  • 1/2 thinly sliced green onions with tops
  • 8 ounces sliced mushrooms
  • 1/2 cup julienne carrots
  • 1 long piece peeled, chopped ginger root (1 inch )
  • 2 cloves garlic, chopped
  • 3 cups water
  • 1 can vegetable broth (14 ounce can)
  • 2 tablespoons soy sauce
  • 1 package oriental flavor ramen noodles
Cook and dice chicken. Thinly slice bok choy, green onions, and carrots. Chop mushrooms, garlic, and ginger root. Place mushrooms, carrots, ginger root, and garlic in cooking pot. Add water, broth, soy sauce, and seasoning packet from ramen noodles; bring to a boil. Add chicken, bok choy, onions, and noodles. Cover; remove from heat and let stand 3 min.
