Martini Vodka Sauce Recipe

Ingredients
1 stick butter (1/2 cup stick)
3/8 cup top shelf vodka
1 cup favorite homemade or jarred tomato sauce
1 cup grated Pecorino Romano cheese
1 cup heavy cream (or substitute half and half)
1 pound pasta (rigatoni, ziti, mostaccioli)
Directions
Melt butter in a medium saucepan; add vodka and simmer gently for 2 minutes until the alcohol dissipates. Add tomato sauce and bring back to a slow simmer. Whisk in grated cheese; add heavy cream and bring back to a slow simmer.
Pour over cooked pasta, toss gently and enjoy!!
