Carrot Cake Jam Recipe

Ingredients
  • 1 1/2 cups finely grated carrots (3-4)
  • 1 1/2 cups peeled chopped pears (2 -3)
  • 1 can crushed pineapple, undrained (14 ounce can)
  • 3 tablespoons lemon juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 6 1/2 cups sugar
  • 3 ounces liquid pectin
Directions
Mix everything but sugar & pectin in pan. Bring mixture to a boil, then reduce down to a simmer for 20 minutes, stirring to prevent burning. Add pectin & return to a boil. Add sugar, bring to a rolling boil for a couple of minutes. Remove from heat, put into hot sterile jars & seal. Yields 8 - 1/2 pts
