Grandpas Carrot Cake Recipe

Ingredients
  • 4 eggs
  • 2 cups grated carrots
  • 2 cups flour
  • 1 teaspoon nutmeg
  • 2 tablespoons cinnamon
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 1 can crushed pineapple (8 ounce can)
  • 2 cups pecans - chopped (optional)
  • 1/2 cup raisins
  • FROSTING:
  • 1 stick butter (softened)
  • 1 package cream cheese (room temp)
  • 1 pound powdered sugar
  • 1 tablespoon vanilla
Directions
Cake:

Mix all ingredients together and pour into two greased, round cake pans. Bake at 350 for 40-50 minutes. Cool.

Frosting:

Mix all ingredients with mixer until creamy.
