Easy Box Cake Mix Whoopie Pies Recipe

Ingredients
  • FILLING:
  • 3 cups confectioners sugar (more may be necessary)
  • 3/4 cup shortening
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 chocolate cake mix (pudding in the mix)
  • 3 eggs
  • 1/2 cup water
  • 1/2 cup oil
Directions
Mix cake mix, eggs, water and oil together in mixing bowl for 2 minutes with electric mixer.

Drop onto cookie sheets. Bake 350° for 8-10 minutes or until done.

Completely cool on rack.

For filling, beat confectioners sugar, shortening, egg whites and vanilla for 5-6 minutes.

Fill cookies and serve.
