Curried Ham and Vegetable Couscous Recipe

Curry powder and raisins add a sweet-and-spicy zing to this ham, vegetable and couscous dish.

Ingredients
  • 2 1/2 cups finely chopped leftover Cook's® Bone-in Ham or Ham Steak
  • 2 tablespoons butter
  • 1/2 cup of each: chopped green bell peppers, broccoli, carrots and red onions
  • 1 1/2 teaspoons curry powder
  • 1/8 teaspoon ground red pepper (optional)
  • 1/4 cup raisins
  • 1 can (14.5 ounces) chicken broth
  • 1 cup couscous, uncooked
  • toasted sliced almonds (optional)
  • chopped fresh cilantro (optional)
  • plain yogurt (optional)
Directions
  • Melt butter in large saucepan over medium heat. Add vegetables; cook 5 minutes, or until vegetables are crisp-tender, stirring frequently. Add curry powder and red pepper; cook and stir an additional 1 minute.
  • Stir in ham, raisins and broth; bring to a boil. Add couscous; mix well. Cover; remove from heat. Let stand 5 minutes, or until liquid is absorbed. Uncover; fluff with fork.
  • Garnish with the almonds, cilantro and/or yogurt, if desired.
