Sausage Purlo Recipe

  • 1 pound hot Italian sausage - cut into 1/4 inch slices
  • 1 onion - medium sized, diced
  • 1/2 cup bell pepper - diced
  • 1 clove garlic - minced
  • 2 cans stewed Italian tomatoes
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups water
  • 2 cups long grain rice
  • Brown the sausage in large skillet.
  • Remove sausage and set aside.
  • Add onions, bell peppers and garlic. Saute until softened.
  • Add thyme, salt, pepper, tomatoes, and sausage.
  • Cook on simmer for 6 minutes, add water and bring to a boil.
  • Add rice, reduce heat to simmer. Cover pan.
  • Cook for 25 minutes or until rice is done.
