Ingredients
  • 1 1/2 cups cooked couscous
  • 2 medium tomatoes, diced
  • 1 cucumber, diced
  • 6 green onions, thinly sliced
  • 1 1/2 cups cooked garbanzo beans (canned ok)
  • 1 cup chopped parsley
  • Ground black pepper
  • 1/4 - 1/2 cup olive oil
  • 3/4 cup fresh lemon juice
  • 1/2 teaspoon Dijon Mustard
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried mint
  • 1/2 teaspoon salt

  • Mix all ingredients together. Best when served cold.
  • Adjust lemon juice and vinegar to taste.
