MOM'S CRUSHED PINEAPPLE COOKIES Recipe

Ingredients
  • 1 1/2 cups sugar
  • 2/3 cup Crisco shortening
  • 2 Eggs
  • 1 can crushed pineapple (8 1/2 ounce can)
  • 1 teaspoon baking soda
  • 1/2 teaspoon Salt
  • 2 teaspoons vanilla extract
  • 3 cups flour
Directions
In large bowl, cream together sugar and Crisco until smooth. Mix in eggs, pineapple, baking soda and salt. Add vanilla, then blend in flour. Mix well. Spoon on lightly greased cookie sheet, bake @ 350° for 10-12 minutes.
