Ingredients
2 cups flour
4 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
1/2 teaspoon soda
2 1/2 cups buttermilk
3 eggs, separated

Beat egg whites until stiff.
Combine remaining ingredients and fold egg whites into batter.
Heat aebleskiver pan until hot.
Pour a little bit of oil into each well in the pan.
Spoon batter into each well.
Use a toothpick or an ice pick to turn the aebleskiver making it into a ball.
Aebleskiver is done when the outside is a light brown and an inserted toothpick comes out clean.
You can eat aebleskiver like a pancake, putting butter and syrup on them.
They are also good with powdered sugar, jam and whipped cream.
Danish tradition includes adding an apple to the center of the aebleskiver while you are cooking them.
