Sea Foam Divinity Recipe

Ingredients
  • 3 cups sugar
  • 2/3 cup warm Water
  • 1/2 cup light corn syrup
  • 2 egg whites, stiffly beaten
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 cup chopped pecans
Directions
Combine sugar, water & syrup in heavy saucepan (I use Stainless Steel). Boil until mixture forms a soft ball when dropped in a cup of cold water, about 245 degrees. Set boiled syrup aside.

Beat egg whites and salt, beat until stiff. Pour hot syrup over egg whites very slowly, beating constantly. Add vanilla. Beat until mixtures loses gloss and will hold a peak just like the egg whites.

Fold in pecans and dip by spoonfuls onto foil paper or waxed paper. Enjoy.
