ALMOND MUFFINS Recipe

Ingredients
  • 1 egg, beaten (medium)
  • 2 cups flour
  • 3/4 cup Milk
  • 1/2 cup almonds, finely chopped
  • 1/2 cup sugar
  • 1/2 cup oil
  • 3 teaspoons baking powder
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon salt
Directions
Mix together egg, milk, oil and almond extract. In another bowl, mix together flour, sugar, baking powder, nutmeg, cinnamon, salt and chopped almonds. Mix the two mixtures together. If batter seems dry, add a little more milk. Spoon into paper muffin cups. Bake at 390° for about 15 minutes.
