Ingredients
  • 2 1/2 pounds new red skinned potatoes, unpeeled
  • 3/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 1/2 teaspoons grated lemon peel
  • 1 medium sized green pepper, diced
  • 1 cup red onion, diced
  • 1/4 cup fresh chopped cilantro
  • 1/4 cup fresh chopped basil
  • Salt and pepper to taste

  • Cook potatoes in salted water until just tender. You don't want to over cook them. Drain and allow to cool. Cut potatoes into cubes.
  • In a small bowl, whisk the oil, lemon juice, and lemon peel.
  • Add the green pepper, onion, cilantro, and basil. Whisk together and pour dressing over potatoes.
  • Add salt and pepper to taste.
  • Let stand in refrigerator for at least an hour to allow potatoes to absorb the flavors.
