Spinach Appetizers Recipe

Ingredients
  • 1 package Stove Top Stuffing Mix for chicken
  • 1 cup hot water
  • 2/3 cup Italian dressing
  • 2 packages frozen spinach, thawed, drained and patted dry (10 ounce pkg)
  • 3 eggs, beaten
  • 1 cup grated Parmesan cheese
  • 1 cup finely chopped mushrooms
  • 1 onion, finely chopped (small)
Directions
Mix stuffing mix, hot water and dressing in large bowl. Stir in remaining ingredients. Shape into 1-inch balls. Place on cookie sheet sprayed with non-stick cooking spray. Bake at 400 for 12 to 15 minutes or until light golden. Makes about 4 dozen.
