Potato Pinwheels Recipe

Combine potatoes, salt, sugar (some) to make easily handled fondant. Add vanilla beat well. Turn 1/2 mixture onto board dusted with sugar. Roll into rectangle 1/4 in. thick. Spread with half peanut butter. roll jelly roll style.
