Shrimp Open Faced Sandwiches Recipe

Ingredients
1 can deveined broken shrimp
3 scallions, white and green, thinly sliced
3 tablespoons sour cream
4 tablespoons mayo
6 tablespoons grated Parmesan cheese
White pepper to taste
14 slices rye bread
14 tiny sprigs parsley
14 whole cooked shrimp
Directions
Drain shrimp. Combine scallions, canned shrimp, sour cream, mayo, cheese and a dash of pepper. Mix by hand until almost smooth. Spread each slice of bread with about 1 tbsp of the shrimp mixture. Top with 1 shrimp and a sprig of parsley. Serve cold.
