Mexican One Pot Recipe

  • 1 tablespoon oil
  • 1 cup chopped onions
  • 8 ounces uncooked whole wheat ziti or rotini
  • 1 green pepper (large)
  • 1 can stewed tomatoes (16 ounce can)
  • 1 teaspoon chili powder
  • 1 pound ground turkey or soy crumbles
Heat the oil in a pan with a cover on medium heat. Add one cup of chopped onions and stir for about 2 minutes or until the onions are transparent. Remove the onions to a plate. Brown the turkey or soy crumbles along with the ziti until the meat is fully cooked and brown. Add the green pepper, onions, and stewed tomatoes and stir well. Add the chili powder, cover the pot, and turn the heat to low. Cook for about 30 minutes or until the ziti is soft, stirring occasionally. This prepares four servings.
