Rice Broccoli Casserole Recipe

  • 3 cups Cooked Rice (approx. 1 cup dry)
  • 2 1/2 Bags Frozen Broccoli (thaw 1 hr.)
  • 1 jar Cheese Whiz (set inch warm water 1 hr.) (16 ounce Jar)
  • 1 can cream of mushroom soup
  • 1 can sliced water chestnuts
  • 3/4 cup Carnation Evaporated Milk
  • 1 tablespoon butter
  • 3/4 cup celery, chopped
  • 1/4 cup onion, chopped
Preheat oven to 350. Saut onion and celery in butter. In a large pan mix soup, milk, 1/2 cheese whiz, and salt & pepper to taste. Mix in the remaining ingredients and put into a 11x13x2 Pyrex baking dish. Drizzle remaining cheese whiz over the top. Bake at 350 for 45-60 minutes. Note: When bubbles appear in the middle of pan, dish is done. This can be made ahead and frozen. Thaw before baking.
